WongaGyal x Yello Juice Bar: Liz’s Carrot Juice

You know Jamaicans don't do anything "juss so", right? Well that's how we've gotten to this rich Carrot Juice recipe. I cannot take credit for this one — this recipe belongs to my mother, Liz. She used to make this for my father on Sundays, and it’s a smell and taste that I remember so fondly.

Whether you call it Carrot Juice, Carrot Punch or Carrot Mix, we're taking advantage of the incredibly nutritious powers of carrots... just with some added flair.

The mighty carrot packs this powerful punch with potassium, several carotenoids (antioxidants that protect your liver) and vitamins A, C and K. Incorporating more carrots into your diet can help improve eye health, boost your immune system, and strengthen your skin barrier.

Adding Dragon Stout (you can switch this out for Guinness if you'd like) is an added flavour bonus, but can also contribute to a healthy diet too! Stout in and of itself is filled with antioxidants, calcium and all B vitamins (except B12). So you get the added bonus of stronger bones and improved cell function!

Given the alcohol content, we do advise drinking responsibly in moderation.   

Recipe (serves 8)

Ingredients:

1lb carrots, peeled & chopped

1/4 cup water

1/2 cup evaporated milk

1/4 cup condensed milk

1/2 tsp grated nutmeg

1 bottle Dragon Stout

Directions:

  1. If you own a juicer, run all carrots through the juicer to separate carrot juice from the pulp.

  2. If you do not own a juicer, add carrots and water (in tbsp increments) to a blender. Blend on low until a thick pulpy liquid comes together. Using cheesecloth or a fine strainer, separate the pulp from the liquid for a smooth pure carrot juice.

  3. Add carrot juice to a blender, along with evaporated milk, condensed milk, nutmeg and Dragon Stout (you may also add a scoop of ice cream for a thicker richer drink).

  4. Blend on medium until well combined.

  5. Pour over ice and enjoy!
